- 5 cups chickpeas
- 1 quart reserved cooking water from chickpeas
- 3/4 cup tahini
- 1 cup lemon juice
- 1/3 cup olive oil
- 1/3 cup vegetable oil
- 4 cloves garlic
- 1/2 Tbsp cumin
Simple hummus recipe from Bethany
1. Soak chickpeas in 2 gallons of water overnight.
2. Strain chickpeas and place into a large pot. Cover with 2 gallons of water. Bring to a boil, skim off, and discard any foam that appears.
3. Once chickpeas are soft, strain and reserve one quart of the cooking water, and let cool.
4. Blend the chickpeas in a food processor with the cooking water, tahini, lemon juice, oil, garlic, cumin, and salt, until very smooth. Add water if needed to change consistency.
