Ingredients

For the crust:


- 1 1/4 cup Graham crackers, finely crushed

- 2 Tbsp granulated sugar

- 1 tsp Kosher salt

- 1/2 tsp fresh ground nutmeg

- 1/4 cup unsalted butter


For the filling:


- 32oz cream cheese, softened

- 1 cup granulated sugar

- 4 eggs

- 1 egg yolk

- 1/4 cup heavy cream

- 1/4 cup crème fraîche

- 2 Tbsp cornstarch

- 2 tsp vanilla extract

- Pinch of salt


For the compote:


- 1 lb strawberries, sliced in half

- 1/2 cup granulated sugar

Description

NYC Cheesecake is the easiest and most delicious dessert you can make at home. With a few simple techniques and a topping of homemade strawberry jam, you can have one of the smoothest and creamiest desserts in the game. Not to mention, you can have your cake with no cracks using this simple technique.

Directions

1. Preheat the oven to 350 degrees F. Prepare the crust by mixing all the ingredients together. Generously grease a 9-inch springform pan with oil (this is important!), pour all of the crust mixture in, and use a flat-bottomed cup to form a flat, even surface. Place in oven for 8 minutes, then remove and let cool completely.

2. Preheat the oven back to 325 degrees F. In a large mixing bowl, mix the cream cheese and granulated sugar, then beat with an electric mixer until creamy. One at a time, add in 4 eggs and 1 egg yolk, and blend each into the mixture.

3. Add the heavy cream, crème fraîche, vanilla extract, cornstarch, and salt to the mixture, then mix together.

4. Pour the mixture over the cooled crust, wrap the bottom of the springform pan in tin foil, and place into a large, deep baking dish filled to 1 inch with boiling water. This will help prevent the cheesecake from cracking. Place into the oven for 1.5 hours, until set.

5. Once done, open the oven and let the cheesecake cool in the oven for at least 45 minutes, until the water bath is cooled. Remove from the water bath and place on a wire rack to cool further. Cover with plastic wrap and cool in fridge for at least 8 hours before serving.

6. To make the compote, mix sliced strawberries with sugar and place in a pot for 15 minutes to sit. Turn the heat to medium and let boil and reduce for 10 minutes, until syrupy. Remove from heat, then take about 1/3 of the mixture and blend it, then mix back in with the compote and serve over a slice of cheesecake.
